A night in with me

Photo of Stefanie Grace

My boyfriend Mark is out tonight having a boys night involving a lot of Playstation I imagine (guys never grow up) so I have spent the evening cooking for one, treating myself to a cupcake and a glass of wine and getting extremely serious about blogging and my writing career. I’ve also pretty much vegged out, watched tv and did very little. My go to quick and easy meal is pasta and pesto with cracked black pepper and freshly grated parmesan. But I felt like I needed some vegetables, so having read Nicole’s post this afternoon, I though that some roasted courgette would go perfectly with this. I added some prosciutto too for a touch of saltiness. What do you think? (I’ve been working on my food photography after a special session at Google London last week – more to come on that next week!)

Dinner Party Tips…

I recently wrote a post on Yahoo! on how to plan the perfect dinner party. I love hosting and cooking dinner for people, especially when there’s a theme involved.

In the same way that staycations are sometimes better than trips abroad, staying in can be better than going out. But if the thought of hosting a dinner party has you reaching for the takeaway menus, take a look at my easy tips for putting together the perfect dinner party menu.
Theme it
This may be obvious to you at the time such as Easter or Christmas, but you could also pick a country, decade or TV show as your theme. If your food is Mexican, get some sombreros. If it’s Italian, Indian or Spanish, pick relevant music for the background. Games are also a great way of getting people to interact with each other and let their hair down.
Choice of menu
The menu is the key ingredient to your night. Thinking seasonally here helps. If it’s a hot summer’s evening…

Happy St Patrick’s Day!

I almost thought I wouldn’t have time to post today. Or be able to, due to the fact that I sliced my finger on a super duper German slicing machine that I was ‘sold’ at the the Ideal Home Show whilst trying to make a Beef and Guinness Casserole. Cue hysterics and boyfriend running to the supermarket to buy plasters and antibacterial wipes. OUCH. However, couple this with a some fabulous films (Love and Other Drugs and You’ve Got Mail) and we’ve had a lovely sofa day.

Hope you all had a lovely day! I’m heading home tomorrow for Mothers’ Day! :)

Recipe: Lemon and Spinach Turkey Steaks

I’m a huge fan of this recipe. Mark discovered it a couple of weeks ago whilst looking for something to do with some leftover spinach. We liked it so much that we just made it again! It’s a great recipe for a quick and healthy midweek dinner. Perfect for coming in from work and not having a clue what to do.
Ingredients
2-3 turkey steaks
2tbsp all-purpose flour
1tbsp butter / low fat margarine
1tbsp olive oil
half an onion, diced,
1 leek, chopped
1 spring onion, chopped
1-2 cloves garlic, diced
2 handfuls spinach
100ml chicken broth
100ml dry white wine
1tbsp lemon juice (pref fresh)
salt + pepper
Method
  1. Melt butter in pan. Cover turkey steaks in flour and season. Cook turkey in melted butter for 4-5mins on each side until golden brown. Set aside the steaks, keeping warm.
  2. Fry the onion, garlic, leek and spring onion in the oil until soft. Add wine to deglaze pan.
  3. Add broth and lemon juice with spinach and cook until spinach is wilted and sauce is reduced by half.
  4. Add turkey back into pan and cook for 1-2 mins in juices.
  5. Serve with rice, pototoes or even just broccoli like we did.

I really like the turkey steaks in this recipe because not only do they contain less fat than chicken but they also go really well with the combination of wine, lemon and greens. It also goes pretty well with a crisp glass of white wine. I can happily vouch for that!
Please let me know if you try this out. I love hearing from you all!

PS. It is loosely based on this recipe.
